Beta cyclodextrin is a kind of white crystalline powder from tapioca starch by effect of glucosyltransferase.
Its unique cavity structure is constructed by 7 dextroses connecting together via α -1.4 bonds.
Outer side of the cavity keeps strong hydrophilic characteristics; Then inner side of the cavity keeps hydrophobic characteristics. It can entrap many kinds of guest molecules into their internal, particularly to entrap oil form substance and form inclusion complexes.
Beta cyclodextrin is widely used in foods, cosmetics and pharmaceutical industries as stabilizer, emulsifier, flavoring agent. etc.
