Sodium alginate,
Also called algin or alginate, is one kind of natural polysaccharide carbohydrate extracted from seaweed. Its molecular weight is 216 and molecular formula is C5H7O4COONa.

Application Fields:

In food industry
Thickening: Salads, pudding, jam, tomato juice, canned products, etc.
Stability: Ice cream, cream and cheese etc.
