INTRODUCTION
It is 100% extracted and refined from the highly purified endosperms of the seeds of the Guar plant "Cyamopsis Tetragonalobus". It is widely suited in various industrial uses such as healthcare and food processing.
Guar gum is most effective as binder, stabilizer and emulsion stabilizer in food processing including dairy and frozen foods, pasta and bakery products, canned foods, sauces and salad dressing, beverage and instant mixes, etc. In cheese and ice creams it improves the texture. It helps hold water in juices and beverages. It makes noodles more resilient. It keeps bread, cakes and cookies smooth, pliable and fresh for a longer shelf life. It acts as an emulsion stabilizer of aqueous phase and water binder in sauces and pickles. It is also a good suspending agent for powdered chocolate mixes. In carbonated drinks it is used to stabilize carbonate and bicarbonate to prevent premature decomsition.
